Thai Chicken Curry

This is a one-pan meal, which is simple to make, yet the flavours are sure to impress your date. Thai curry is full of fresh ingredients and full of flavour. 

Ingredients

  • 1 ½ pound of boneless chicken breasts 
  • 2 tablespoons coconut oil
  • 1 bell pepper, thinly sliced
  • 1 zucchini
  • 1 packet of sweet corn
  • A bunch of shallots
  • 2 cloves of minced garlic 
  • 1/2 teaspoon grated fresh ginger
  • 2 tablespoons red curry paste
  • 1 x Table Spoon Fish Sauce
  • 1 can of coconut milk
  • A lime
  • A handful of fresh cilantro
  • Rice for serving

Method

1. Heat the oil over medium-low heat in a large nonstick pan. Add the shallots, garlic, and ginger. Cook for 3 – 5 minutes, do not brown.

2. Add the coconut milk, red curry paste and fish sauce, bring to a gentle boil.

3. Add in the chicken pieces and cook for about 6 minutes.

4. Add in the rest of the vegetables and cook till they become nice and tender.

5. Serve with rice, topped with coriander and lime to garnish.

Chicken and Mushroom Risotto

What is more romantic than Italian food, not only does risotto pair perfectly with a glass of wine but it’s delicious. Making risotto shows that you have put time and effort to make your date a meal to remember.

Ingredients

  • 2 tablespoons butter
  •  2 skinless chicken breasts, cut into 1/2-inch pieces
  • 1/2 pound mushrooms.
  •  1 tablespoon cooking oil
  •  1 chopped onion
  •  1 1/2 cups Arborio rice
  • 3 cups of chicken stock, you can always add more if needed
  •  1/2 cup white wine
  •  1/2 cup grated Parmesan cheese, plus more for serving
  •  1 handful of chopped fresh parsley
  •  Salt
  •  Black pepper

Method

  1. Heat the butter in a frying pan. Keep this at moderate heat as you add the mushrooms making sure they are coated in the butter continue to stir till they are browned. Add in the chicken a pinch of salt and all the pepper and cook till the chicken is done.
  2. In a separate pot bring the chicken stock to boil.
  3. In a large pot, heat the oil and cook the onion for about 5 minutes. Add in the rice and stir through, add in the wine and the remainder of the salt. 
  4. With a ladle begin to add the stock, waiting for the liquid to be absorbed before adding more. Cooking till the rice is tender.
  5. Stir in the chicken mushroom and half of the parmesan and parsley. Keep stirring for another 5 minutes so they soak up the flavours.
  6. Serve the risotto adding the rest of the parmesan and parsley to garnish.
