2 large Sweet Potatoes
3 TBSP Olive Oil
Salt & Pepper (To Taste)
Chives (Optional)
Preheat oven to 400 degrees F. Cut the sweet potatoes lengthwise into ¼ inch to ½ inch thick strips. In a bowl, toss the sweet potato strips with the olive oil and sprinkle with salt and pepper (to taste). On a baking sheet, arrange the sweet potatoes in a single layer and bake for 15 to 20 minutes. Turn the potatoes and bake for an additional 10 to 15 minutes. Garnish with chives and serve.
*Johnna’s tip: Love these as a side dish especially when I’m craving fries. Serve with Greek yogurt or plain ole ketchup alongside your favorite burger or steak.
