After a little retail therapy, it’s only right to have a few mimosas, which is probably why La Sandia launched their Sunday brunch in Tyson’s Corner. Every Sunday from 11 AM-3 PM, the restaurant features a Mexican style menu with highlights such as traditional Mexican Huevos Rancheros made with skillet fried eggs, refried beans, salsa al arbol, panela and chilaquiles; Breakfast Tacos; Mexican Chocolate Waffles with cajeta, fried plantains, whipped crema and strawberry sauce; Enfrijoladas with scrambled egg enchiladas, bean puree, chorizo, potatoes, charros, crema and queso; and Carnitas Sopes Eggs Benedict served with corn cakes, mole poblano, potatoes and plantains…and the list goes on. Of course flan and churros wrap up the meal on the dessert menu while Mimosa’s and Margarita’s fulfill the cocktail fetish. Ole!
