World Tour: Greek Salad
I absolutely have to go to Greece. Not just because i’m obsessed with The Sisterhood of the Traveling Pants, I think the scenery would be positively breathtaking, but because I believe that the people, the food and the culture in general would all be breathtaking as well. I especially think that the authentic Greek cuisine would make for a life-changing experience. Greek cuisine is heavily centered around fish and olive oil, two ingredients that I absolutely love. While I have yet to save the United Airlines points necessary purchase a cheap flight to Greece, I have been trying to find ways to integrate more Greek and other Mediterranean-esque dishes into my diet, given their health benefits. One of the most simple and most enjoyable dishes – especially for the hot summer – is the Greek salad. Here’s an easy-to-follow recipe from All Recipes.
Ingredients
- 1 head romaine lettuce- rinsed, dried and chopped
- 1 red onion, thinly sliced
- 1 (6 ounce) can pitted black olives
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 large tomatoes, chopped
- 1 cucumber, sliced
- 1 cup crumbled feta cheese
- 6 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 lemon, juiced
- ground black pepper to taste
Directions
- In a large salad bowl, combine the Romaine, onion, olives, bell peppers, tomatoes, cucumber and cheese.
- Whisk together the olive oil, oregano, lemon juice and black pepper. Pour dressing over salad, toss and serve.
